Hi Again,

It is time for me to add this little recipe that I found for Flapjacks. I have modified it a bit to my taste.



  • 1.5 cups cake flour  (192 gr)
  • .5 cup of sugar (100gr)
  • 1 tablespoon baking powder
  • pinch of salt (.25 teaspoon)
  • 1.25 cups milk
  • .25 cup melted butter (113gr)
  • 2 large eggs lightly beaten
  • 2 teaspoon cinnamon (optional)

(If you are making for many, then just double or triple the recipe, I find that with a family of seven I have to at least double the recipe)

So here goes:

Lightly beat the two eggs in a small container (keep one side).

Melt the butter in the microwave or on a stove top (your preference) - It is important to use only butter, it makes all the difference.

Mix all the dry ingredience together.

Add all wet ingredients and mix together. Do not overmix but make sure that it is well mixed.

I find the mixture works best if it can pour of a spoon (it must not be too thick).

If you have access to a flat electric frying pan or similar, it works the best.

Use a .25 cup measure and pour the mixture onto the hot surface. You can determine the size of your flapjack, but I tend to make them about 8cm across. Once you see bubbles on the surface of the flapjack, flip them over and cook for another minute.

If you have added cinnamon, then the flapjacks will be a lot darker.

Ps. To make them a bit different add some choc pieces to the mixture and cook as above. I recently made some choc chip flapjacks for a party and they were a huge hit.
